Yeah, for J, try "J is for Jabirus, on which we gorge". For Y, "Y is for Yajur-veda, of which we often use"

EDIT: I've realized the Y phrase won't rhyme with itself, but hey, the Z phrase doesn't rhyme with itself or it's neighbors, either!

Well, you already have gorge for J, I replaced the J word but kept 'gorge' at the end. It rhymes that way, with Forge (from "I is for Iron").

Yajur-veda is Sacrificial Formulae or something like that.
