Cowboy Bebop! Seriously, it's amazing. Full Metal Alchemist is up there too, especially Brotherhood. But actually, if you count it, my absolute favorite Anime is Avatar: the Last Airbender...but only because it's pretty much just as good and also longer than Cowboy Bebop.
