This isn't a question about the mushrooms.

I just noticed that i can hit the giant pig, but after whacking away for a while, he hasn't died. Can he be killed? Just curious, dumb things like this bother me.

No. He can't.

No, the giant pig can't be killed if there is no damage number shown when you hit him. He CAN be killed if you see a number shown each time you hit him and maybe it could take a while to kill him.

Well, yea, he shows a number, just i sat there for a long time and he wouldn't die.

Uh, check the scripts of the DMOD and perhaps you can find one script that shows the pig.
