I've gotten two parts of the ancient scroll, but I don't know where to get the third piece. Any help?

One scroll piece is acquired by defeating the cannibals (south desert, past the fire) and one by resolving the missing daughter subquest (oasis). The other one you get by completing both fetch quests that Anbar gives you at the inn. If you open up the mysterious box before you give it to him (and hey, it's pretty tempting) then you can buy the scroll piece from the shady guy on the bottom floor of the inn instead.

please help!! i can't get out of water caves, can't "turn on" the water ????? i have two bombs, blew the rocks on left side and down....now what??????????????

After you have blown these rocks up, follow the path around. You'll know when the water has been "turned on"!
