It took 30 minutes for my family and me to figure out how it knows. So don't look down VVV if you don't wanna know how it works.
It can only be done with certain numbers. After you click the crystal ball, the possible answers change and have the same symbol. After you figure out one of the numbers, you can always tell which symbol the crystal ball will show.

Um, what he means, is that when you subract the sum of the two digits from a two digit number, the possible solutions all have the same symbol. Therefore, whatever number you choose, ab - a - b, will have the symbol n.
And IMNSHO, "_" doesn't deserve symbol status. I could deal with octothorp or lemniscant, even an angstrom. But a bloody underscore? Boooo!
