A long high-stat boss is annoying, a low stat boss is boring and almost pointless.
I agree that it needs some tactic-- either like zelda's type that repeats in some pattern giving you only moment to damage it each time and possibly needing a combination of attacks to properly damage it, OR just some combination of attacks you have to pull off, OR some kind of defend enemy attack whilst you do something like stepping on switches or such, OR something completly original you think up.
Ppl can easily edit the game to give themselves lot's of potions when the boss is too high it's annoying so no matter how high the stats are, with a hit and run tactic the bosses are boring
