Personally, I think the original Dink had a pretty good method of distributing monsters. In the beginning, you encounter just pillbugs, and then pillbugs and boncas, and then pillbugs and boncas and purple boncas... etc, etc, building up the difficulty level of the newly introduced monsters while still having the old, easier to kill monsters around to help you build up experience or kill to get a heart and heal yourself.
Bosses should be *hard*. I think the best gaming experience I've ever had was dying fifteen times in attempt to beat one of the bosses in Final Fantasy X. It's frustrating, but when you finally beat it, it makes that boss that much more important to the story or whatever.
