I'm not sure how the Hebrew scriptures came about, nor if anybody knows for sure, but the Christian scriptures came from the accounts of Matthew, Mark, Luke, John, and Paul, who all were his apostles and disciples, except Paul, who was just an apostle. And they all wrote their accounts of Jesus, which ended up in the Bible.
The other Bible that I know something about is the Qu'ran, which came from Mohammad going to a mountain or something of that sort near Mecca and taking notes of the preachings the angel Gabriel gave him there over a pretty long period of time, I believe.
And as for proving that God does exist, that's way out of my league.
