When the full version is released the demo is usually removed. So the ones that are left are pretty much the ones that will never be finished.
There aren't that many demos around that are so good that I would really want them to be finished. I haven't played all of them but of the ones I played 'Once a hero' is the only one I can think of. 'Crosslink' and 'Back from the grave' are great too, but were created so long ago that they would never be finished in the same style that they were made in originally. The style of DMOD making has definitely changed over time, and finishing those DMODs today would be like putting a modern day extension to an old building: It would never feel like a single structure.
