It would have to be the Citar(is that how you spell it?). Mandolins are pretty kick-ass and underused too.

Sitar.

Tablas, Chinese Fiddles, shamisen, koto, stuff like that. Harps are cool as well, and I don't hear them much.

Tablas are used quite a lot here(India), and so are sitars.
I think the most used instrument has to be the guitar(I play it too ).

In my humble opinion it's the French horn. I played it in high school and no one else wanted to learn it because it was "too hard". Shame. It's one of the most beautiful-sounding instruments around.
