The ending mostly depends on whether you fight Jameil in the Temple of the Ancients. There are 4 bad endings and 3 good endings.
Bad ending 1 : Don't fight Jameil, have Alessa with you at the end of the game, run away after killing the Scarab Man.
Bad ending 2 : Same thing, but with Fabian.
Bad ending 3 : Same thing, but with Dertin.
Bad ending 4 : Same thing, but stay after killing the Scarab Man (Dink dies).
Good ending 1 : Fight Jameil, have Alessa with you at the end of the game.
Good ending 2 : Same thing, but with Fabian.
Good ending 3 : Same thing, but with Dertin.
Each of your companions has a subquest (Alessa's memories, Fabian's secret, Dertin's daughter). If you complete them and get a good ending, the ending will be a bit longer.
HINTS : Alessa's subquest : Somewhere upstairs in the Cloud Castle tower. You need Alessa in your party. Fabian's subquest : You'll need to talk to him and Alessa a lot when they're in your party. You can't complete this quest at the beginning of the game, either - you'll need to be fairly far in the game. Dertin's subquest : His daughter lives at the oasis. You'll have to find a way to convince him to say "I forgive you" to his daughter.
EDIT : The Scarab Man is not Dertin. "The master" is Jameil. To enter his lair, you need either all three pieces of the Ancient scroll or the Light Sword. The entrance to the temple is near that weird Stonehenge-like place (you know, this weird stone circle southeast of town).
EDIT 2 : About the Ancient scroll, here's some unfinished walkthrough stuff from the spells list :
Ancient Scroll
Location : The Ancient Scroll appears in your inventory once you've gotten at least one scroll fragment, but you need all three scroll fragments before you can use it. You can get the first fragment from Anbar after you complete his second subquest. If you opened Anbar's package, tell Anbar that you opened his package, then go downstairs (if this is the first time you go downstairs, the guy behind the counter will stop you. Speak with him and buy a ticket for 50 gold) and speak with he man who sells Berserk Potions. You will be able to buy the scroll fragment for 100 gold. You can get the second fragment from either Samantha's mother or Samantha after solving Samantha's subquest (if you either kill Fred or tell Samantha's mother that Samantha is dead, you get the scroll fragment from Samantha's mother. If you kill Samantha's mother, you get the scroll fragment from Samantha). To get the third scroll fragment, go to the cannibals' cave and rescue the girl there. Then enter the house west of the cannibals' cave entrance and speak with the girl you rescued, she will give you the scroll fragment.
Comments : If you want to complete the 'Temple of the Ancients' quest before freeing Cthilmor, you need this item to unmask the entrance to the Temple of the Ancients. Go to area 14 on the map (the screen where there are weird stones that make this place look like Stonehenge), and use the scroll. A glowing hole will appear, go down it to enter the Temple.
FYI, Anbar can be found in the inn. To get to the oasis, you'll need to blow a hole (with a bomb) into the Tower that's blocking the way.
(Oh, and I'd post the map here if I could, but obviously, I can't. I suppose I could ask Dukie to upload it, though - he's the only one who has a copy of it aside from me, as far as I know).
