I found...finally....that by hitting them from the left or right
(hit and run) that I had the best chance of not getting killed by them. I fired on them in order to have them come after me rather than moving all about the screen. Of course, once you get the light sword, it is much easier to kill them. I used the light sword to level up in experience before I returned to Armend for the tournament.
