Ubuntu (probably also its relative Kubuntu) and MEPIS are both one-disk distros. Debian (on which both Ubuntu and MEPIS are based) has a one-disk internet installer, which installs the basics from disc and gets the rest from the internet. This might take a while, though.
Ubuntu has a separate LiveCD, while the MEPIS install CD can also be used as LiveCD. The rest is personal preference. I myself only got the Ubuntu LiveCD to fully work. The Debian internet installer didn't find the wireless network, so it left me with nothing but a prompt (I tried to get the packages from another CD myself, but failed). MEPIS found the network (both the liveCD and the installed version), but didn't connect to the internet. Keep in mind that this might also be my incompetence.
