I am also a "put most of your level up points into defense" person. It makes the most sense based on the math in the game. The percentage of damage shaved off what is done to Dink is generally at a much higher percentage than the damage boost strength does to his enemies, especially late in the game when you get so many weapons that boost his strength. There are no defense boosting items you can equip in the main game.

When playing mods, I've found that putting stats into defense helps a ton because some of them are really hard and that will be your best chance at survival. I'm suspecting how people put stats into Dink is part of the reason why some people have a hard time with certain mods and others find them easy.
