I used to start with defense, and when it's high enough, I continue with magic. Eventually, I do everything with ranged attacks.
However, this is a pretty slow system; choosing attack at the start helps a lot speeding up the game. So lately, I'm still using the same approach, but I put several points in attack before starting to build up defense and magic.
As was written, attack eventually doesn't really do anything due to the strong weapons. So after about 3 added strength points, there's no point in leveling that up any further IMO.
In FIAT, I also put everything in defense. Then I met this boss who I couldn't seem to damage. So I thought he had a lot of defense, and my attack wasn't high enough. I restarted and put everything in strength. But it didn't help; I had to be clever instead of strong.
