Diamond Weapon in Final Fantasy VII had 1.000.000 HP, I'd say he's harder than Seymour Flux.
Skorn, that boss is nothing compared to Lost Odyssey's Bogimoray. First of all, once you actually beat it, another appears and uses it's Para-Flare attack (Which is devastating on your party members.) and will move in and try to kill you.
It is a boss on Disk one that made me want to stop playing. That was the first disk of four! whereas with Seymour you already are leveled up decently and have good equipment.
So... I think I deserve a bit more than a few cookies.

I've beaten FFX numerous times, that guy was crazy easy

Beat Ragu Ragla all 5 times before saying a boss is hard.
Final Fantasy requires a lot of Grinding. Unless you're planning on completing the game at a specific level as a challenge to yourself, you're going to have to wait until you've grinded a fair bit before you can get past almost any boss.
It just depends on how quickly you want to beat the game.

You're thinking of the Emerald Weapon. The Diamond weapon was fought as it approached Midgar, but it only has around 20,000 HP or so.

It doesn't really require that much grinding, it's pretty balanced.
I've left Mt Gagazet to farm gil and rank of Sphere Lvls. I'n aiming toward getting Zombie Ward Armours. Any suggestions?
Personally I think Seymour Flux was the hardest boss it the series then probably Ultamaecia from VIII

Hardest final boss, to me, would HAVE to go to Zeromus (FFIV). In the DS remake he's way harder though.

Yu Yevon = Failest boss ever. A candle of life kills him! He was spamming curaga so I used it knowing that bosses are immune to everything except direct damage, and a counter appeared above his head. I wasn't sure if I should be confused or happy.

Try fighting Gongora from Lost Odyssey. Or Lavos from Chrono Trigger. Or The Core from Headhunter: Redemption.
Lavos was a jerk. First thing that happens is death rains from the sky. He was one of those multiple form bosses that make you yell at your TV, "WHEN IS IT GOING TO END?!"
Zeromus was pretty tough on the difficult version of FFIV (there were two versions, I think, one where Cecil had Dark Wave and one where he didn't), but mostly because I was so disgruntled with the game I couldn't be bothered to level up anymore... Stupid game forced a kitty ninja and a lifeless summoner in the final party, instead of letting you take the cool characters.
Lavos isn't a pushover unless you make use of the New Game+ mode.
As for Zeromus, I barely managed to defeat him at an extremely low level after constantly running away from all the final area battles just to get there.

Nothing is particulary hard in Chrono Trigger imo, except first-time Lavos at the Ocean Palace.
You're supposed to be defeated by Lavos at the Ocean Palace.
Yeah, he's kinda impossible first-time. I'll say Lavos at Ocean Palace in New Game+ then. He's annoying.

EDIT: Still training to beat Seymour Flux. Getting trash-loads of Holy Waters just so I can get a 50% chance of avoiding his Lance of Atrophy. Even then, there's no way I could survive Total Annihilation.

Can't....beat him...URRGHHhhh... Seriously though, why the hell can't I beat this guy?
Titan Ant was easy! All I had to do was put all of my money into the ATM and randomly walk around and fight until I was at a good level.

Another really tough boss, not an RPG one, would be the Dark Dragon from Ninja Gaiden Dragon Sword. That thing was wasting my HP in powerful combos. When I finally got the strategy though, he was pretty simple. But the Fiends prior to that boss were pretty tough too. You know, the blue one with huge knockers and the undead looking one that keeps running away?
