Right. I see it has given you that page, but this page seems more appropriate: Schiphol - Utrecht Centraal (as opposed to Weesp - Schiphol). According to that page, travelers between Schiphol and Utrecht go (by train) through Amsterdam Centraal, which adds 15-30 minutes. Total train time is then about an hour.
The "not driving" statements refer to the "intercity" which is a type of train.
And indeed, when in doubt, there's people at Schiphol, Amsterdam Centraal, *and* Utrecht Centraal who know what to do.
